Loaded Tomato Pasta V1

For today’s meal I have made a ‘Loaded Tomato Pasta V1’. This is an easy meal to throw together before your weekend ride. This meal can be easily adapted for veggies/vegans, with the beans being a key part of this one, providing good complex carbs and protein.

For this meal you are only going to need 1 pan and a pot for your pasta.

Ingredients (2 people)

  • 3-4 rashers of bacon or 1 pot of pancetta bits

  • 2 small shallots - diced

  • Handful of mushrooms

  • Spinach

  • 1 tin of chopped tomatoes

  • 1 tbs of double cream

  • 1 pot of mixed beans/kidney beans

  • Pasta of your choice

  • 1-2 Chillies (if you want an extra kick)

Method

  1. Chop and fry the bacon in a medium heat pan.

  2. Once cooked, add the diced shallots and fry until beginning to golden. (Now is a good time to boil and salt the water).

  3. Add the mushrooms (chopped or whole) and beans (drained) to the pan and lower heat to medium/low - simmer for 2-4mins (can add chillies here if you can handle the heat).

  4. Now add the pasta to the boiling water and add the chopped tomatoes to the pan and allow to simmer for 3-4mins.

  5. Season to taste (Worcestershire sauce, salt, pepper, oregano and thyme are my recommendations), add the cream and spinach and periodically stir until the pasta is cooked.

  6. Finally, when the pasta is ready, drain the water and add to the sauce. Now you’re ready to indulge!
