Duck and veg

This is very simple to throw together as a snack (or as a meal, depending on serving size). Lots of fibre and protein in this one. 20mins from start to finish.
You’ll need 1 pan, a baking tray and a wok (a normal frying pan works well)
Ingredients
Stir fry veg pack (I used an M&S one here)
2 duck breasts with skin
Soy sauce
Method
Pre-heat the oven to gas mark 6/180 degrees C.
Fry the duck, skin side down, in a medium heat pan for 4-5 mins or until crispy. Then turn the breast skin side up and seal it (approx. 1min)
Place the duck onto the baking tray and put into the oven for 12-15 mins.
Take the duck breast out of the oven and leave to rest for 4mins. While the duck is resting, stirfry the veg in a hot wok/pan and add a couple lashings of soy sauce
Finally slice the duck and add it to the veg and you’re all done
